We are seeking an Sous Chef for our prestigious account in Laguna Woods, CA. This position is approximately 40 hours per week including Saturday and Sunday from 11:00 a.m to 7:30 p.m.. with flexibility of hours from time to time

Job Responsibilities:
The ideal candidate will have 5 years experience as a Sous Chef or like position. Must be able to work independently with initiative to complete job responsibilities each day. The ideal candidate will have excellent communication skills communicating effectively with all levels of employees and have the ability to manage time deadlines and work well under pressure. In this position the sous chef will work in coordination with the chef to complete all food preparation. Prepare visually appealing and good tasting foods to Guckenheimer standards. Prepare, season, and cook soups, meats, vegetables, desserts, or other foodstuffs as required. In this position you will also be responsible for the efficient and accurate distribution of food to on and off site catering delivery teams.

Qualifications:
Culinary School or Hospitality certification or work equivalent.
Must be able to communicate with others to convey information effectively - embracing and participating in a team environment
Embrace and participate in a positive work environment
Lead by example in committing to excellence and superior customer service
5 years professional cooking experience to include at least 3 years experience in a banquet catering kitchen
2 years minimum supervisory experience in a professional kitchen
Comprehensive knowledge of all cooking techniques as well as the ability to execute with consistently excellent results
Knowledge and skill in a variety of international cuisines
Knowledge and understanding of purchasing, scheduling, and cost controls
Strong leadership, organization, training and supervisory skills
ServSafe certification with thorough knowledge of HACCP and Safe food handling standards and procedures
Willingness with flexibility in work schedule as a result of frequent change in catered events.
Willingness for potential to work overtime hours, evening and weekend work.

Position Responsibilities:
Maintain HACCP program requirements
Season and cook food according to recipes and experience.
Observe and test foods to determine if they have been cooked sufficiently, taking
temperatures. Adjust seasoning to customer tastes.
Portion, arrange, and garnish food, and serve food to patrons.
Regulate temperature of ovens, broilers, grills, and roasters.
Substitute for or assist other cooks during emergencies or rush periods.
Assist with Inventory completion
Must follow all safety rules and actively prevent accidents.
Commitment to the service values and ethics of the client company.

Essential Skills and Experience
Must be able to correctly and safely use standards kitchen equipment. Chefs' knives; Convection ovens; Rotating rack ovens; Meat and cheese slicing machines, steamers, mandolins, grills and broilers.
Knowledge of principles and processes for providing customer service. This includes customer needs assessment, meeting quality standards for service, and evaluation of customer satisfaction.
Knowledge of raw materials, production processes, quality control, costs, and other techniques for food preparation.
Job requires being reliable, responsible, and dependable, and fulfilling obligations.
Job requires accepting criticism and dealing calmly and effectively with high stress situations
