OUR COMPANY
Coastal Luxury Management, LLC. (CLM), is a fast growing company focused on identifying and creating unique opportunities in the hospitality, entertainment, and event sectors. CLM produces Pebble Beach Food & Wine and the Los Angeles Food & Wine Festival, both recognized amongst the top epicurean events in the country known for bringing together the highest caliber of culinary and wine talents to create once-in-a-lifetime experiences. In 2010, CLM launched the first of three restaurants in Monterey, CA -- Cannery Row Brewing Company, a family-friendly destination in the heart of the historic Cannery Row District as well as home to the largest draft selection of beer in Northern California. One year later, the team opened Restaurant 1833, earning national recognition including a 3-star review from the San Francisco Chronicle as well as a 2011 "Best New Restaurant" nomination from the James Beard Foundation. In the fall of 2012, CLM partnered with the famed Stonepine Estate in Carmel Valley, California to serve as the property's exclusive catering and large scale event producer. This partnership then spurred the launch of CLM's catering company, Coastal Luxury Catering (CLC). In the summer of 2013, CLM plans to open its third restaurant concept in Downtown Los Angeles.

The ideal Executive Chef candidate will possess a minimum of five years' experience running and maintaining all aspects of the kitchen. The Executive Chef must be well organized, possess high standards in professionalism, have a positive attitude and work well with others. The position demands creativity on a daily basis, experience with food costing, sanitary requirements, payroll, scheduling, high volume a la carte, and banquets. Applicant must work well under pressure, be organized and have supervisory experience. The need for positive enthusiasm and excellent communication skills is a must. The selected candidate will take leadership on influencing menu design while controlling costs and increasing profitability.

THE REQUIREMENTS:
? Certificate or degree in Culinary preferred.
? A minimum of 5 years' experience as Executive Chef or Executive Sous Chef in a high volume, full service, fine dining restaurant.
? Impeccable service standards, clean work habits and attention to detail.
? Ability to multitask in a high volume kitchen while always maintaining your sense of humor and appearing calm.
? Professional demeanor & polished appearance with the ability to interact with all types of team members.
? Proven ability to lead a staff and positively influence employee behavior.
? Must have excellent verbal communication skills and have the ability to work a flexible schedule.

QUALIFICATIONS
? Previous experience in a Michelin rated restaurant is an asset
? Certification from a recognized culinary institute
? 3 to 5 years work experience in a large hotel, or large freestanding restaurant as Executive Chef, Executive Sous Chef, or Chef de Cuisine
? Excellent communication and organizational skills
? Strong financial comprehension
? Work all stations in Kitchen
? Compute basic arithmetic
? Knowledge of food cost controls
? Operate, clean and maintain all equipment required in job functions
? Proven record of excellent administrative and strong verbal-communication skills.
? Commitment to perfection and genuine passion for hospitality.
? Ability to control food cost.
? Finding new food suppliers and price negotiations; knowledge of the local products a plus.
? Provide key input on the organizational structure of the kitchen, and the menu
? Ability to deal with people from all backgrounds.
? Reliable, flexible and an excellent leadership.
